Ingredients:
- 2 large bell peppers (any color)
- 1 cup cooked ground meat (beef, turkey, or chicken) or a plant-based alternative
- 1/2 cup cooked rice or quinoa
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/4 cup diced onion
- 1/4 cup diced tomatoes
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Olive oil spray
Instructions:
- Prepare the Peppers: Cut the bell peppers in half lengthwise and remove the seeds and membranes. Lightly spray or brush the inside of each pepper half with olive oil.
- Prepare Filling: In a bowl, combine the cooked ground meat, cooked rice or quinoa, shredded cheese, diced onion, diced tomatoes, garlic powder, paprika, salt, and pepper.
- Stuff Peppers: Spoon the filling into each pepper half, packing it in slightly.
- Preheat Air Fryer: Preheat your air fryer to 360°F (180°C) if your model requires preheating.
- Cook: Place the stuffed bell pepper halves in the air fryer basket in a single layer. Cook for 12-15 minutes, or until the peppers are tender and the filling is heated through and slightly browned on top.
- Serve: Carefully remove the peppers from the air fryer and let them cool slightly before serving.
