Crockpot beef tips & noodeles

Here’s a simple recipe for crockpot beef tips and noodles:

Ingredients:

  • 1.5 to 2 pounds beef stew meat (or beef tips)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup beef gravy (or 1 cup additional beef broth with 2 tablespoons of flour or cornstarch)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 8 oz egg noodles
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Beef: Season the beef tips with salt and pepper. In a large skillet, brown the beef tips over medium-high heat, then transfer them to the crockpot.
  2. Add Vegetables and Seasonings: Add the chopped onion and minced garlic to the crockpot.
  3. Mix the Sauce: In a bowl, mix together the beef broth, beef gravy (or additional beef broth with flour/cornstarch), cream of mushroom soup, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the beef and onions in the crockpot.
  4. Cook: Cover and cook on low for 7-8 hours or on high for 3-4 hours, until the beef is tender.
  5. Prepare the Noodles: About 30 minutes before serving, cook the egg noodles according to the package instructions. Drain and set aside.
  6. Combine: Once the beef is tender, stir in the cooked egg noodles. Adjust seasoning with salt and pepper as needed.
  7. Serve: Garnish with fresh parsley if desired and serve hot.

Enjoy your hearty and comforting meal!
