Ingredients:

1 medium head of cabbage, chopped

1 large onion, chopped

2 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

1 bell pepper, chopped (optional)

1 can (14.5 oz) diced tomatoes

4 cups vegetable or chicken broth

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
  2. Add the carrots, celery, and bell pepper (if using). Cook for about 5 minutes, stirring occasionally.
