French Onion Soup Rice Recipe
Ingredients
For the Soup Base:
4 large onions, thinly sliced
2 tablespoons olive oil
1 tablespoon unsalted butter
4 cups low-sodium beef or vegetable broth
1 teaspoon sugar (to help caramelize the onions)
2 cloves garlic, minced
1 teaspoon fresh thyme (or 1/2 teaspoon dried)
Salt and pepper to taste
1 bay leaf
For the Rice:
1 cup Arborio rice (or any short-grain rice)
2 cups of the prepared onion soup
1/2 cup grated Gruyère cheese (or Swiss cheese)
Fresh parsley, chopped (for garnish)
Instructions
- Caramelize the Onions:
In a large pot, heat the olive oil and butter over medium heat.
Add the sliced onions and cook slowly, stirring frequently, for about 20-30 minutes until they are caramelized and golden brown. Add the sugar halfway through to enhance caramelization.
- Add Flavor:
Stir in the garlic and thyme, cooking for another minute until fragrant.
- Make the Soup:
Pour in the broth, add the bay leaf, and season with salt and pepper. Bring to a simmer and let it cook for 15-20 minutes. Remove the bay leaf before serving.
- Cook the Rice:
In a separate pot, bring 2 cups of the prepared onion soup to a boil. Add the Arborio rice, reduce to a simmer, and cover. Cook for about 18-20 minutes, stirring occasionally until the rice is creamy and cooked through.
- Combine and Serve:
Stir in the grated cheese until melted. Adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
