Ingredients:

  • 2 large bell peppers (any color)
  • 1 cup cooked ground meat (beef, turkey, or chicken) or a plant-based alternative
  • 1/2 cup cooked rice or quinoa
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced onion
  • 1/4 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil spray

Instructions:

  1. Prepare the Peppers: Cut the bell peppers in half lengthwise and remove the seeds and membranes. Lightly spray or brush the inside of each pepper half with olive oil.
