Ingredients:

  • 1 can (14.75 oz) of pink or red salmon, undrained
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper (optional)
  • 1/2 cup breadcrumbs or crushed crackers
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Oil for frying (vegetable or canola oil works well)

Instructions:

  1. Prepare the Salmon:
  • Open the can of salmon and drain it, but keep some of the liquid. Flake the salmon with a fork, and remove any bones if desired.
